Quinoa is a seed and is one of the coolest superfood that Mother Nature gives us.
This pseudocereal has one of the highest levels of biological value, in fact it has the 9 main amino acids to synthesize proteins. Its glycemic index is so low that it keeps us with sustained energy for much longer and is a great help to prepare a healthy, easy and good recipe.
1 cup of quinoa
2 1/2 cups of water
Salt and pepper to taste
Wash the quinoa (pass it through water until the water comes out clear)
In a pot add the quinoa washed with the cup water and salt to taste. Cook until the water has evaporated and it is soft. Let rest
Cut the mango, the avocado, the tomato and incorporate it into the quinoa when it is cold. Sprinkle with pepper and dress with lemon and olive oil
